2 Asian-inspired vegetarian recipe ideas to try

The motivations for this diet change for flexitarians lie mainly in the desire to be healthy. So, to help these people come up with vegetarian meal ideas, we offer two Asian-inspired recipes, guaranteed meat-free!

The recipe for General Tofu Tao

This dish, normally chicken, is a mixture of vegetables and fried tofu. A real delight!

Ingredients for 2 people:

  • 1 carrot
  • 1/2 clove garlic
  • 16 g coriander
  • 150 g brown red rice
  • 1/2 onion
  • 46 g salted soy sauce
  • 1 tablespoon vinegar (white or rice)
  • 100 g shiitake mushrooms
  • 1/2 leek
  • 1 cuil. cure soup
  • 2 cuil. soup of sunflower oil
  • 200 g plain tofu
  • 2 cuil. soup of water
  • 1 cuil. corn soup
  • Salt and pepper

The preparation steps:

  1. Start by cooking the rice in boiling salted water for about 35 minutes. Cooked, it must be tender.
  2. In the meantime, peel and cut the leeks and onion into small pieces and the carrots into thin sticks.
  3. Heat a drizzle of cooking oil in a sauté pan over medium heat.
  4. Add the leek, carrot and onion for about 10 minutes.
  5. Halfway through cooking, add a little water and cover the frying pan. Season.
  6. In parallel, cut the mushrooms into thin slices and incorporate them into the sauté pan. Extend the cooking by about 5 min.
  7. For the sauce, chop the garlic.
  8. Dissolve the corn in a tablespoon of water and mix it with garlic, vinegar, soy sauce and sunflower oil.
  9. Heat a tablespoon of water and sugar in a small saucepan. The sugar should dissolve and the mixture should turn slightly brown to turn into caramel.
  10. Once the caramel is obtained, take the pan out of the heat and add the sauce containing corn. Put back on the fire and whip while bringing to a boil. Mix for 2 to 3 min and remove from heat.
  11. For tofu, cut it into pieces and brown it for 2 to 3 minutes in a sauté pan with a drizzle of cooking oil.
  12. Add the cooked rice and vegetables, then the sauce. Mix well.
  13. It’s ready. For dressing, scatter a few chiseled coriander leaves.

The recipe for vegan minced pork caramel

Caramel pork is a classic of Asian cuisine. Revisit the recipe by replacing pork with a commercially sold vegan minced preparation.

Ingredients for 2 people:

  • 1 zucchini
  • 120 g udon noodles
  • 20 g golden sesame
  • 150 g of natural vegan minced
  • 1 carrot
  • 46 g salted soy sauce
  • 4 cuil. soup of water
  • 1/2 clove garlic
  • 4 tablespoons sugar
  • 1/2 yellow onion
  • Cooking oil
  • Salt and pepper

The preparation steps:

  1. Prepare the vegetables: slice the onion, cut the zucchini into half slices and cut the peeled carrot into sticks.
  2. In a sauté pan over medium heat with a drizzle of cooking oil, sauté, in order, the onion 2 min, the carrot 5 min and the zucchini 10 min with the rest of the vegetables.
  3. While the vegetables cook, prepare the caramel by mixing sugar and water in a saucepan over medium heat for 3 min.
  4. Once the caramel is ready, add the chopped garlic, soy sauce and vegan minced. Cook for 7 to 8 minutes while stirring regularly. Season.
  5. In parallel, cook the udon noodles. For this, immerse them in a pot of water brought to a boil and salted. Allow 2 to 3 minutes of cooking.
  6. Drain them and stop cooking by passing them under cold water.
  7. Mix the vegetables, caramel mince and noodles.
  8. For service, sprinkle with sesame.
