Chocolate Ganache Hazelnut Cake

Ingredients (one 8-inch cake):

Hazelnut Cake

  • 1/4 cup skin-on hazelnuts, toasted and cooled
  • 1/2 cup plus 2 tablespoons cake flour
  • 1/2 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, separated
  • 1 large egg white
  • 1/4 cup vegetable oil
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Chocolate Ganache

  • 1/3 cup heavy cream
  • 100 grams dark chocolate, cut into small chunks

Whipped Cream

  • 1 cup heavy cream
  • 1 tablespoon powdered sugar


  • 1/4 cup chocolate shavings
  • 1/4 cup hazelnuts, roughly chopped


  1. Preheat the oven to 350F. Use parchment paper to line the bottom of an 8-inch round cake pan that hasn’t been oiled.
  2. Hazelnuts should be finely processed in a food processor.
  3. Combine the flour, sugar, baking powder, and salt in a mixing bowl. To blend, stir everything together.
  4. Egg whites should be whisked until soft peaks form in the bowl of a standing mixer fitted with a whisk attachment. Scrape the remaining meringue into a new bowl. Remove from the equation.
  5. Egg yolks, oil, water, and vanilla should all be mixed together in the same bowl.
  6. Mix in the flour mixture until a smooth batter develops.
  7. Half of the meringue should be folded into the batter until it is almost completely incorporated. Fold in the remaining meringue until it is barely integrated into the batter. Pour the batter into the cake pan and smooth it out evenly.
  8. Bake for 20 to 25 minutes, or until a wooden pick inserted into the center of the cake comes out clean. Cool for about 10 minutes in the pan on a wire rack before inverting onto rack. Allow to cool fully before serving.
  9. Place chocolate and heavy cream in a medium heatproof bowl over a saucepan of boiling water to make ganache. 5 minutes of stirring with a wooden spoon until the mixture is melted and smooth. Remove from the heat and set aside to cool.
  10. To make whipped cream, mix together the heavy cream and powdered sugar until stiff peaks form.
  11. Place the cake layer on a serving dish to assemble the cake. Pour ganache over the top of the cake and spread it out carefully with an offset spatula to cover the whole top surface.
  12. On top of the ganache, gently add a thick layer of whipped cream.
  13. Top with chocolate shavings and hazelnuts.
