Pistachio Cake with White Chocolate Frosting

The addition of matcha green tea gives this pistachio cake a natural green hue, and it’s topped with a thick and velvety white chocolate icing.


For the pistachio cake:

  • 1 cup shelled pistachios (3/4 cup flour), ground into a meal
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoon matcha powder
  • 1/2 teaspoon coarse salt
  • 1/2 cup vegan butter (or vegetable shortening)
  • 3 tablespoons vegetable shortening
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsweetened plain coconut yogurt
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract, optional

For the white chocolate frosting:

  • 7 ounces white chocolate chips
  • 1 cup vegetable shortening or vegan butter
  • Pinch coarse salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons almond milk
  • 3 – 4 cups powdered sugar


To make the cake

  1. Preheat the oven to 350 degrees Fahrenheit and grease and flour two 8-inch baking pans.
  2. Pistachios should be ground finely in a food processor or food mill until they resemble almond flour.
  3. Combine ground pistachios, flour, baking powder, matcha, and salt in a mixing dish. Whisk until the ingredients are evenly distributed. Remove from the equation.
  4. Beat the vegan butter, vegetable shortening, and sugar in a large mixing basin with an electric mixer until light and fluffy, about 2 minutes.
  5. Add the eggs one at a time, beating well after each addition.
  6. Combine the milk, yogurt, vanilla extract, and almond extract in a mixing bowl until thoroughly blended.
  7. Add about 1/2 cup of the flour mixture to the wet ingredients at a time, mixing well after each addition. Continue scraping the sides as required until everything is well combined.
  8. Fill prepared pans halfway with batter and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove the cakes from the oven and cool to room temperature before icing.

To make the frosting:

  1. In a small mixing dish, combine white chocolate chips. To assist the chocolate melt, microwave for two 30-second intervals, stirring in between. If necessary, heat for another 10 seconds after stirring until the chocolate is melted.
  2. Combine the butter or shortening, salt, vanilla extract, and almond milk in a large mixing bowl using an electric mixer. 1 cup powdered sugar and 1 cup melted chocolate Mix until everything is well blended.
  3. Then, 1 cup at a time, add powdered sugar until you achieve the required consistency.
  4. As desired, frost the cake.
