When the main winter holiday is behind, it is time for a measured vacation, which you want to spend fun and cozy. In addition to New Year’s comedies, the analysis of gifts, and walks in the fresh air in the company of friends, an invariable attribute of the holidays is a warm drink of wine, which is called mulled wine.

It is believed that the first semblance of mulled wine appeared in ancient Rome – then people mixed red wine with spices, but did not heat it. A drink closer to the modern one was created in Medieval Europe – red wine was taken as a basis (usually from the Bordeaux region), galangal was added to it, and then heated without bringing it to a boil. Soon, a warm alcoholic beverage began to spread around the world, and today almost no winter celebration can do without mulled wine. For the classic recipe, dry red wine is used (while there are two more subcategories of the traditional variation: with the addition of water and without), but fans of mulled wine often go beyond tradition and experiment with ingredients – both main and secondary. Classic mulled wine

Ingredients:

  • Red dry wine 1 l
  • Cinnamon 2 sticks
  • Cloves 5 buds
  • Nutmeg to taste
  • Ginger root 5 g
  • Allspice to taste
  • Orange 1 pc.
  • Honey 1 tbsp. l

Method of preparation:

Wash the orange and peel the zest without affecting the albedo. Squeeze the juice into a deep saucepan, send the zest and spices there, put on low heat, and boil for 5 minutes. Next, add honey and pour wine – it is important to ensure that the drink does not boil, otherwise the alcohol will evaporate, and mulled wine will acquire a sour taste. Remove the pan from the heat, cover with a lid and let it brew from 30 minutes to 1 hour, then heat a little and serve immediately, pouring mulled wine into glasses and decorating with cinnamon sticks.

Tip: for classic mulled wine, choose red dry wines that are not aged in oak barrels. In addition, the wine should not be too tannin and age-related. Perfect cabernet sauvignon, young merlot, saperavi.

Mulled wine from rose wine with jam

Ingredients:

  • Rose dry wine 1 l
  • Honey 1 tbsp. l
  • Star anise 2 g
  • Anise 1-2 stars
  • Strawberry jam 2 tbsp. l. (you can choose any other to taste)
  • Grapefruit 1 pc.

Method of preparation:

Wash grapefruit and peel the skin, squeeze the juice into a pan, send the zest, spices, and jam there, boil for a few minutes on low heat. Then add honey, dissolve and pour in the rose wine. Cook for about 5 five minutes, not bringing to a boil and stirring constantly. Remove from heat and serve hot.

Tip: for the preparation of mulled wine from white and pink wines, a more stringent temperature regime is required – such a drink cannot be heated above 50 degrees. As for the choice of wine, preference should be given to such grape varieties as Chardonnay, Riesling, Sauvignon Blanc (for whites), and Grenache, Cabernet Franc (for rosé wines).

Mulled wine with rum and candied fruits

Ingredients:

  • Dry red wine 1 l
  • Rum 200 ml
  • Honey 1 tbsp. l
  • Orange 1 pc.
  • Cloves 5 buds
  • Ginger root 2 g
  • Allspice to taste
  • Cinnamon 2 sticks
  • Candied fruits to taste

Method of preparation:

Wash the orange, peel off the skin. Squeeze the juice into a deep saucepan with a thick bottom, put the zest, spices, and candied fruits there, heat for a few minutes. Then add honey and wine, boil for about 5 minutes. At the very end, pour in the rum, stir, remove from the heat and let it brew for 30 minutes (and preferably 1 hour). Serve mulled wine hot, after garnishing with your favorite spices or orange zest.

Tip: if desired, rum can be replaced with any other strong drink to your taste: brandy, aquavit, and even fortified wine.
